Crab Cakes (Dwight and Bobbie Gail)

Mix all ingredients except bread crumbs! Form into 10 crab cakes adding bread crumbs to coat
- Bread Crumbs (very little)
- 1/2 cup mayo
- 2 T. Dijon mustard
- 2 t. Old Bay Seasoning
- 1/8 t. cayenne pepper
- 1 red bell pepper, finely chopped
- 2 large egg yolks (sometimes 3)
- 2 pounds jumbo lump crab meat
- 2 green onions, finely chopped
- 1 splash of Worcestershire sauce
Bacon & Bourbon Collards (Southern Living)

Cut bacon crosswise into 1/4 inch strips
- 4 thick bacon slices
- 3 T. butter
- 1 large sweet onion, diced
- 1 (12 oz.) bottle ale beer
- 1/2 cup firmly packed brown sugar
- 1/2 cup bourbon
- 1 t. dried crushed red pepper
- 6 lbs. fresh collard greens, trimmed and chopped
- 1/2 cup apple cider vinegar
- 1 t. salt
- 1/2 t. pepper
Dixie Crossroads Corn Fritters

Heat cooking oil to approx
- Oil for frying
- 2 cups flour
- 1 T. baking powder
- 1/2 t. salt
- 4 T. sugar
- 2 eggs, beaten
- 1 cup milk
- 4 T. liquid butter blend
- 1 cup whole corn, drained
- Powdered sugar
Congo Bars (MOM)

Beat eggs with mixer and add to cooked sugar mixture
- 1 lb. box brown sugar
- 1 & 1/2 stick margarine
- Cook until bubbles, cool slightly
- 3 eggs
- 1 t. vanilla
- 2 & 3/4 cup flour
- 2 & 1/2 t. baking powder
- 1/2 t. salt
Black Bean Dip

Mix all in food processor! Let sit in fridge overnight!
- 1 T. Olive oil
- 1/2 c. Chopped red onion
- 1/2 c. Red pepper (or use small red, orange and yellow)
- 1 jalapeño
- 2 cloves garlic chopped
- Sauté all above until clear!
- 2 cans black beans, drained and rinsed
- 1 lime juiced or 2 T.
- 1 t cumin
- 1 t smoked paprika
- 1 t ground mustard
- 1/2 t cayenne
- Fresh cilantro or fresh basil
Jalapeno Popper Dip (Terri Marbais)

Mix first 4 ingredients until well blended
- 2 - 8 oz packages cream cheese, softened
- 1 & 1/2 cup mayo
- 1 jar jalapenos, chopped
- 4 cups shredded cheese
- Panko crumbs and melted butter
3 Day Pickles (or Squash) Merle in GA

This recipe is from Merle and Grace in GA
- Wash and weigh 7 lbs. of cucumbers/peppers or yellow squash and onions.
- Slice thin; put in very large pot and add 2 cups of cooking lime and 2 gallons of water and soak overnight.
- Remove from lime and water and wash with clear water; cover with cold water and let stand for 3 hours.
- Mix 2 qts. of vinegar, 5 lbs. of sugar, 1 t. celery seed, 1 t. salt. Drain water from above; pour this over squash and let stand 5 hours.
- Put on stove and let boil 35 min. Put in jars and seal.

- 1 box carrot cake mix
- 2 eggs
- 1/4 cup oil
- 1/2 cup raisins
- 1/2 cup chopped nuts

- 1/2 c. red bell pepper, chopped
- 1 c. broccoli, chopped
- 1/4 c. water chestnuts, drained & chopped
- 2 T. onion, chopped
- 2/3 c. cream of chicken soup
- 4 oz. shredded CoJack cheese
- 1 clove garlic, pressed
- 2 pkgs. refridgerated crescent rolls

- 1/4 c. slivered almonds
