Mix flour with baking soda
- 1 & 1/4 c. unsifted all purpose flour
- 1 t. baking soda
- 1 cup butter or margarine, softened
- 1/4 c. sugar
- 3/4 c. firmly packed brown sugar
- 1 pkg. (4 oz.) Jello-Brand Vanilla Flavor Instant Pudding & Pie Filling
- 2 eggs
- 3 & 1/2 c. quick cooking oats
- 1 c. raisins
Peanut Butter and Ice Cream Pie (Pampered Chef)

- 2 cups finely crushed creme-filled peanut butter sandwich cookies - about 16 cookies
- 1/4 cup creamy peanut butter, melted
- Mix together and bake for 10 minutes at 350! Freeze
- 1 quart vanilla ice cream
- 1/4 cup chopped peanuts
- 1 cup coarsely chopped cream filled peanut butter sandwich cookies - about 8 cookies
- 1 quart strawberry ice cream
- Spread ice cream over crust. Sprinkle with nuts and cookies; top with strawberry ice cream.
- 2 cups thawed frozen whipped topping.
- 3 T. chopped peanuts
- Spread half of whipped topping over ice cream; pipe the rest to make pretty, sprinkle with peanuts.
Chicken Pot Pie

Melt margarine in medium saucepan over medium heat
- Filling:
- 1 pkg. Pillsbury refrig. pie crusts (15 oz.)
- 1/3 cup margarine
- 1/3 cup chopped onion
- 1/3 cup all purpose flour
- 1/2 t. salt
- 1/4 t. pepper
- 1 & 1/2 cup chicken broth
- 2/3 cup milk
- 2 1/2 - 3 cups shredded chicken
- 2 cups frozen mixed vegetables, thawed
Backyard BBQ Chicken Cheese Dip (T Simple)

Combine first 5 ingredients in an oven safe dish; top with additional cheese to taste
- 1 packet BACKYARD BBQ DIP MIX
- 8 oz. cream cheese, soft
- 1/2 cup shredded chicken
- 1/2 cup shredded cheese, plus extra for topping
- Hot sauce to taste
- Blue chips
Seven Layer Cookies

Cool before cutting into squares
- 1 & 1/2 cup graham cracker crumbs
- 1 stick margarine, melted.
- Mix these 2 together and pat into a greased 9x13 inch pan.
- Sprinkle 1 package chocolate chips over crust.
- Sprinkle 1 & 1/2 c. flaked coconut over choc. chips.
- Sprinkle 1 c. chopped nuts over coconut.
- Pour 1 can sweetened condensed milk evenly over top.
- Bake at 350 for about 25 minutes.
Barbeque Meatloaf (Paula Dean)

Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce
- 1 & 1/2 lb. ground beef
- 1 cup fresh bread crumbs
- 1 onion, diced
- 1 egg, lightly beaten
- 1 & 1/2 t. salt
- 1/2 t. pepper
- 2-8 oz. cans tomato sauce
- 3 T. vinegar
- 3 T. brown sugar
- 2 T. dijon mustard
- 2 T. worcestershire sauce
- 1/2 cup water, to thin sauce if necessary
Salsa (Homemade) Mama SAMs Recipe

- 1 T diced garlic
- 1 small can tomato paste
- 1 cup vinegar
- 1/4 t alum
- 1/2 t pepper
- 1 T pepper
- 4 cups chopped tomato (I used 8 cups)
- 1 cup chopped onion
- 1 & 1/2 t cilantro

- 1 cup whole fresh blueberries
- 1/4 cup fresh lemon juice
- 3 T. chopped fresh cilantro
- 2 seeded and minced jalapeno peppers
- 1/3 cup diced red bell pepper
- 1/2 t. kosher salt
Sweet Potatoe Casserole

Bake at 350 until top is crusty, about 30-40 minutes
- 3-4 cups mashed sweet potatoes
- 1 cup sugar
- 2 eggs
- 1 t. vanilla
- 1 stick butter
- 1 cup coconut - optional
- Place in 9x13 in pan. Top with 1/2 cup flour, 1 cup chopped nuts, 1/3 stick butter, & 1/2 cup brown sugar.
