Nebraska Rey Bread Boat Dip

Combine mayo, sour cream, minced onion, parsley, Beau Monde and dill
- 1 & 1/3 cup mayo
- 1 & 1/3 cup sour cream
- 2 T. minced onion
- 2 T. parsley
- 2 t. Beau Monde
- 2 t. dill weed
- 2 - 3 oz. pkg. pressed corned beef, chopped fine
- 2 loaves unsliced rye bread
Raspberry-Habanero Goat Cheese Puffs

Preheat oven to 400. Line cookie sheet with parchment paper
- All purposed flour for dusting
- 1/2 pkg. (17.3 oz.) frozen puff pastry sheets (1 sheet thawed)
- 1 egg, beaten
- 1/4 cup sliced almonds, divided
- 1 t. finely chopped rosemary leaves
- 4 oz. goat cheese
- 4 oz. cream cheese, softened
- 1/4 cup Rasberry Habanero Sauce, divided

Strawberry Spinach Salad

Melt butter then add sugar and pecans and salt; stir until covered for about 3-5 minutes
- 1 T. Butter, 1 T. Packed brown sugar, 1/2 c. Pecan halves, pinch of salt
- Dressing: 2 T. Sugar, 1/4 c. Light olive oil, 1/4 c. White wine vinegar, 1 T. Dijon mustard, 2 cloves of garlic minced, 1/2 t. Salt, 1/4 t. Pepper, 1/4 t. Paprika.
- Salad: 10 oz. fresh baby spinach, 1/4 small red onion sliced, 1 qt. Fresh strawberries sliced, 1/2 c. Fresh blueberries, 1/2 avocado diced in pieces, 5 oz. blue cheese crumbles.
Tequilla Lime Chicken

Squeeze limes in food processor
- Options for serving:
- 4 limes
- 1 cup tequila
- 1/4 cup olive oil
- 2 T. salt
- 5 cloves of garlic, minced
- 1 jalapeno, sliced
- 1/2 bunch cilantro, chopped
- 12 boneless skinless chicken breast
- 2 cup grated Monterey jack cheese
- Corn or flour tortillas, grated cheese, pico de gallo, avocado, sour cream, lime wedges, jalapeno slices
Banana Split Cake (Mom)

Directions above!
- 2 cups graham cracker crumbs
- 1 stick margarine, melted
- Combine these 2 ingredients and press into a greased 9x13 pan.
- 2 cups powdered sugar
- 2 eggs
- 2 sticks margarine
- Beat these 3 ingredients with a mixer for 10 minutes. Spread over crust.
- 4 large sliced banana's(goes over creamed mixture)
- 1 large can of crushed pinapple, drained (goes on top of banana's)
- 1-10 oz. cool whip (spread over pineapples and banana's)
- 1 cup chopped nut-sprinkle over coolwhip
- 1 cup chopped march. cherries-sprinkle over coolwhip
- Chill 3-4 hours or overnight.
Carrot Cake (Ben Davis)

Mix together, then fold in carrots! Hand mix all ingredients! Grease and flour 9x13 pan
- 1 & 1/2 cup vegetable oil
- 2 teaspoons baking soda
- 2 cups sugar
- 1 teaspoon salt
- 4 eggs
- 2 teaspoons cinnamon
- 2 cups all purpose flour
- 3 cups raw finely grated carrots
- Frosting: 1/4 cup butter
- 4 oz. soft cream cheese
- 2 & 1/2 cups confection sugar
- 1 teaspoon vanilla
Ruby's Pound Cake

Ruby Maloy's Recipe
- Frosting:
- 8 eggs, seperated and room temperture
- 1 lb. salted butter, room temperture
- 2 & 2/3 cup sugar
- 3 & 1/2 cup white lily plain flour
- 2/3 cup evaporated milk
- 1/4 t. baking powder
- 2 t. orange extract
- 2 t. coconut extract
- 2 t. vanilla extract
- Mix well and cook in a large flute pan. Bake at 275 for 1 & 1/2 hours.
- 3 T. milk
- 3 T. butter
- 3 T. lemon juice
- 2 cup powdered sugar
- 1/8 t. lemon extract
Jambalaya (Pam's Recipe)

Mix altogether and top with some more cheddar cheese
- 1 lb. Jimmy Dean Sausage, cooked and drained
- 2 - lb. smoked sausage, cut up
- 1 bell pepper, cut into small pieces
- 1 small onion, chopped
- 3 T. oil (cook onion and green pepper)
- 1/4 t. thyme
- 1/2 t. salt
- 1/2 cup water
- 12 oz. V8 juice
- 3 cup cooked white rice
- 2 cups shredded cheddar cheese
- pinch of sugar
Wild Rice Salad

In a 1 qt. pot with lid, bring 2 cups water and salt to a boil
- Dressing:
- 2 cups water
- 1/2 t. salt
- 1 cup wild rice
- 1 - 6 oz. jar marinated artichoke hearts, drained and halved, reserve marinade.
- 1 - 6 oz. can green peas
- 1/3 cup green pepper, chopped
- 3 green onion, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup toasted almonds, for garnish
- 1 1/3 cups canola oil
- 1/2 cup white vinegar
- 1/4 cup grated parmesan
- 1 T. sugar
- 1 t. salt
- 1 t. celery seed
- 1/2 t. pepper
- 1/2 t. dry mustard
- 1/4 t. paprika
- 1 clove garlic, minced
Easy Tortellini Toss (Pampered Chef)

- 3 T. all-purpose butter
- 1 garlic clove, pressed
- 1 cup 2% milk
- 2 1/2 oz parmesan cheese, grated 2/3 cup
- 1 - 8 oz. slice deli ham (1/2 inch thick)
- 1/2 t. black pepper
- 1 16 oz. bag frozen cheese filled tortellini's
- 1 14.5 oz can chicken broth
- 1 6 oz. bag fresh baby spinach
