Bourbon Bacon Jam

Cook bacon until crisp. Drain well
- 1 & 1/2 pounds of bacon
- 2 cups shallots, finely chopped
- 1 cup Visalia onion, finely chopped
- 4 garlic cloves, chopped finely
- 1 t. Chili powder
- 1/2 t. Smoked paprika
- 1/2 cup bourbon
- 1/2 cup maple syrup
- 1/4 cup balsamic vinegar
- 1/2 cup brown sugar
Mackenzie's Taco Dip

Mix as directed before and serve!
- 8 oz. cream cheese, soft
- 8 oz. sour cream
- 1 pkg. taco seasoning
- Mix all together and spread in a 9x13 pan.
- Top with a jar of salsa.
- Top with 8oz. of sharp shredded cheese
- Top with a bag of shredded lettuce.
- Serve with chips!
Homemade Ice Cream

Add Eagle Brand Milk, sugar, vanilla and fruit in a blender
- 1 can Eagle Brand Milk
- 2 cups sugar
- 1 T. Vanilla flavoring
- Milk - using whole milk makes it better
- 3 cups fruit
Bunny Dip

Melt 3 T. butter in large skillet
- 1/4 cup butter, divided
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 13 oz. can artichoke hearts, chopped and drained
- 8 oz. cream cheese
- 1/2 cup mayonnaise
- 3/4 cup fancy shredded parmesan cheese
- 8 oz. shredded cheddar cheese
- 2/3 cup chopped pecans
- 1/2 cup herb seasoned stuffing mix
Sausage & Potato Soup (Tastefully Simple)

In a large saucepan over medium heat, whisk together water, soup mix, and wahoo chili seasoning
- 6 cups cold water
- 1 package Perfectly Potato Cheddar Soup Mix
- 1 T. Wahoo Chili Seasoning
- 1 (13-16) oz. package Kielbasa sausage, sliced or diced
- 4 cups chopped kale, stems removed
Mandarine Orange Cake

- 1 box Duncan Hines Golden Butter Recipe Cake Mix
- 1 small can mandarine orange slices, juice also.
- 1/2 cup oil
- 4 eggs
- 16 oz. cool whip
- 1 small can crushed pineapple, drained
- 1 pkg. vanilla instant pudding, dry

- 1 T. white wine vinegar or champagne
- 1 T. capers
- 1 t. coarse grained mustard
- pinch kosher salt
- pinch freshly ground pepper
Ceviche (Joe's)

Mix altogether and let sit at least 8 hours in refrigerator
- 2 lbs. meat (shrimp, fish-tilapia, scallops) whatever you choose
- Cilantro - as much as you like
- 1/2 red onion chopped
- 9 limes - squeezed
- 3 lemons - squeezed
- 1/2 cup orange juice
- 1/2 cup ketchup
- 1 cap liquid smoke
- dash of hot sauce
- 2 shots of tequila
