Ingredients

  • 1 c. water
  • 1/3 c. teriyaki sauce
  • 1/2 c. lime juice
  • 3 cloves garlic, minced
  • 1 tsp tequila
  • 1 tsp liquid smoke
  • 1/2 tsp salt
  • 1/4 tsp ground ginger
  • 1 pound boneless, skinless chicken breasts.
  • DRESSING
  • 1/4 c. mayonnaise
  • 1/4 c sour cream
  • 2 tbsp spicy, chunky salsa
  • 1 tbsp milk
  • 1 tsp Cajun blackening spice
  • 1/4 tsp parley flakes
  • 1/4 tsp Tabasco sauce
  • 1/8 tsp dried dill weed
  • 1/8 tsp ground cumin
  • 1 c. shredded Colby Jack cheese
  • 2 c. crumbled corn chips.

Preparation

Step 1

Whisk together the water, teriyaki, lime juice, garlic, tequila, liquid smoke, salt and ginger. Coat the chicken in the mixture and marinate in the refrigerator for at least 2 hours.

To prepare the dressing, whisk together the mayonnaise, sour cream, salsa, milk, Cajun spice, parsley, Tabasco, dill weed, and cumin. Cover, and refrigerate until needed.

Preheat the broiler. Grill the marinated chicken breasts fro 3-5 minutes per side, until cooked through. Discard the marinade.

Brush the grilled chicken with the chilled dressing, sprinkle with the cheese, and broil until the cheese has melted.

Serve the chicken over a bed of the crumbled chips.
