Ingredients

  • 2 1/2 c frozen white kernel corn, thawed or
  • (2 15.25 oz can sweet whole corn)
  • 1 med tomato, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1/4 c chopped red onion
  • 1/4 c chopped fresh cilantro
  • 1/4 c white wine vinegar
  • 2 tb lime juice
  • 1/2 tsp salt
  • 3 sm avocados, peeled and chopped

Preparation

Step 1

Combine all ingredients except avocado. Gently stir in avocado. Cover and chill at least 2 hours. Serve with tortilla chips or grilled fish or chicken.
