Steak n Bacon Cheddar Meatballs

Ingredients

  • 2 TBSP olive oil
  • 1 medium onion, minced
  • 2 lbs ground beef
  • Bacon
  • 6 oz grated cheddar cheese
  • 1/2 cup bread crumbs
  • 3 eggs lightly beaten
  • 2 tsp salt

Preparation

Step 1

Oven 450
Brush 13x9 dish with 1 tbsp olive oil
Heat remaining olive oil in large skillet. Add onions and bacon and saute until golden brown. About 10 minutes
Using slotted spoon, transfer onions and bacon to a small plate. Let cool.

Combine bacon, onion and rest of ingredients and mix by hand.

Roll mixture into 24 golf size balls. Pack firmly. Place balls in pan and roast until cooked through. 18-20 minutes.
