Ingredients

  • Crust
  • 1 1/2 cups almond flour
  • 1/4 cup butter
  • 1 t. salt
  • Pumpkin Pie
  • 1 15 oz can pumpkin
  • 1 13 oz can coconut milk
  • 1/2 cup honey or agave nectar
  • 3 eggs
  • 1 T. pumpkin pie spice
  • pinch of salt
  • 1 T. arrow root starch (dissolved in a little cold water)
  • 1 t. vanilla

Preparation

Step 1

Heat oven to 350 F. Mix crust ingedients. Press between two pieces of wax paper and roll it out into a circle for a 9" pie crust. Remove the top wax paper and place the crust in a 9" pie plate and press. Place in the freezer for a few minutes and then remove the top piece of wax paper.

Mix all pie ingredients until well blended. Place in crust and bake for 80-90 minutes or until pie is set. Remove from oven and cool completely before serving.
