Ingredients

  • 3 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnanon
  • 3/4 cup chopped nuts
  • 1 tsp. vanilla
  • 3 eggs
  • 2 cups sugar
  • 1 cup oil OR margarine
  • 2 cups coarsely-shredded zucchini (skin left on)
  • 1 8-oz. can crushed pineapple, drained

Preparation

Step 1

In bowl combine flour, baking soda, salt, baking powder, cinnanon and nuts.

Beat eggs, add sugar, oil and vanilla. Beat until creamy. Stir in pineapple and zucchini. Add dry ingredients and nuts. Stir only until moist.


Bake 1 hour at 350 deg.

Makes 2 loaves.
