Glazed Carrots

Ingredients
- 1-1/2 lbs. carrots (about 6 large)
- 1/3 cup apple juice
- 3 tablespoons butter
- 2 teaspoons brown sugar
- 1 tablespoon chopped parsley

Step 1
Cut the carrots into thin coins, using a very sharp knife or the slicing blade of a food processor.
In a medium saucepan bring the apple juice, butter and brown sugar to a boil over medium-high heat. Stir in the salt, then add the carrots, reduce the heat to medium, cover and simmer, stirring occasionally, until the carrots are tender, 5-8 minutes. You might want to reduce the liquid in the pan by cooking uncovered for the last minute or two.
Toss the carrots with the parsley and serve.
