Grapefruit Meringue Pie

  • 3 eggs separated(or 1/2 cup eggbeaters)
  • 1 cup sugar
  • juice of 1/2 large grapefruit
  • 1 cup boiling water
  • 2 tbsps. flour
  • 1/4 tbsp. melted butter



Step 1

Mix flour, sugar, and pinch of salt; add the boiling water gradually, stirring constantly. Add butter and cook 15 minutes over a slow fire, stirring occasionally. Add grapefruit juice and then the beaten egg yolks or eggbeaters. Cook again until thick. Cool. When cool put into a baked pie crust. Take the egg whites of the 3 eggs and make meringue. Put over the pie and bake at 325 degrees until meringue is golden brown.
