Carrot Cake with Cream Cheese Icing

Ingredients
- Cream Cheese Icing:
- 2 c. sugar
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 3 tsp. cinnamon
- 1 1/2 c. vegetable oil
- 4 eggs
- 3 c. finely grated carrots
- 1 c. chopped nuts, optional
- 1 tsp. vanilla
- 3 oz. pkg. cream cheese
- 1/4 c. margarine
- 1 tsp. vanilla
- 2 c. sifted powdered sugar

Preparation
Step 1
Sift the sugar, flour, baking soda, salt and cinnamon together. Stir in oil. Add eggs, one at a time, mixing well after each addition. Add carrots, nuts and vanilla, mixing thoroughly.
Pour into a floured and greased 13 x 9 x 2" cake pan.
Bake at 350 degrees for 30 minutes or until toothpick, comes out dry.
Cool in pan. Spread with icing.
Cream Cheese Icing: Mix first 3 ingredients together. Gradually add sugar, beating until smooth. Frost cake.
