- 2 cups cooked corn
- 2 cups diced tomatoes
- 2 avocados - peeled and diced
- 6 T chopped red onion
- 2 T chopped cilantro
- 2 T extra virgin olive oil
- 1 T fresh lemon juice
- 1 t salt
- 1/4 t white pepper
- 1 jalepeno pepper - seeded and diced
