Ingredients

    tsp peanut oil, divided

  • 1

    lb lean ground pork

  • 1

    clove garlic, minced

  • 1

    red bell pepper, thinly sliced

  • 4

    oz shiitake mushrooms, trimmed, thinly sliced

  • 2

    Tbsp low-sodium soy sauce

  • 2

    Tbsp Asian chili paste

  • 4

    scallions, thinly sliced

  • 1

    c cooked brown rice

  • 12

    leaves Bibb lettuce (1–2 large heads)

  • 1/4

    c chopped fresh cilantro

Directions

1. HEAT 1 teaspoon of the oil over medium heat in a large nonstick skillet. Cook the pork for 5 minutes, stirring often, or until browned and cooked through. Add the remaining oil, garlic, pepper, and mushrooms and cook for 5 minutes, stirring often. Stir in the soy sauce, chili paste, scallions, and brown rice and cook for 2 minutes or until heated through. 2. ARRANGE the lettuce leaves on a serving platter. Fill the leaves with the pork mixture evenly. Sprinkle with cilantro leaves.
