Roasted Asparagus with Olive Vinaigrette

  • 2 lbs asparagus
  • 3 T olive oil
  • Kosher salt & ground pepper
  • 1/2 C chopped kalamata olives
  • 2 T chopped parsley
  • 1 T sherry vinegar

Step 1

Heat oven to 450. On rimmed baking sheet, toss asparagus with 1 T oil & salt & pepper. Roast, tossing once, til tender, 8-12 min.
Meanwhile in small bowl, mix together olives, parsley, vinegar & remaining 2 T oil; season with salt & pepper. Spoon over asaragus.
