Breakfast Endive Hame and Gruere

- 8 endives, intact but cored
- 4 tablespoons butter
- 8 slices low-sodium ham
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- Freshly cracked black pepper, for seasoning
- 1/8 teaspoon freshly grated nutmeg
- 8 ounces Gruyere cheese, grated

Preheat oven 350 to 375 degrees
In a lg pot with a steaming basket, bring 1-in water to boil. Put endives in/ cover/ cook
10-15 mins.til soft. Put in colander, drain, push down w/clean kit towel til most water
is out of endives. Do not mush!
In lg fry pan med heat, melt 2 tbls butter. add endives,cook, turning til brown. Remove, wrap each
in 1 slice ham. Set aside.
In sm saucepan on med heat, melt 2 tbls butter. whisk in flour, cook 1 minute, do not brown flour.
Whisk in milk slowly.Bring to boil whisk constantly, reduce heat to med low, simmer til thick @ 8 mins.
Season w/pepper and nutmeg.
Spread @ 1c sauce on bottom of 9x13" glass baking dish, arrange ham-wrapped endives in single layer.
Cover w/last of sauce and cheese. Bake til cheese is melted and sauce is bubbling, @ 30 mins. Put under
top rack of broiler til cheese has patches of gold @2mins. Serve hot w/bagette slices.
