Ingredients
- 1/4 cup butter
- 3 tablespoons sugar
- 3/4 cup flour
- 2 beaten eggs
- 3/4 cup sugar
- 1/4 teaspoon lemon zest
- 3 tablespoons lemon juice
- 2 tablespoons flour
- 1/4 teaspoon baking powder
- powdered sugar

Preparation
Step 1
Grease an 8x8x2-inch pan. In a small mixing bowl beat butter on medium speed for about 30 seconds. Add 3 tablespoons sugar then beat until fluffy.
Stir in 3/4 cup flour. Pat into bottom of the pan. Bake at 350 degrees for 15 minutes.
Meanwhile in a mixing bowl combine egg, sugar, zest, lemon juice, 2 tablespoons flour and baking powder. Beat on medium speed about 3 minutes or until slightly thickened, then pour over baked layer in pan.
Continue baking for 25 to 30 minutes or until edges are lightly brown and center is set.
Cool, dust lightly with powdered sugar if desired. Cut into 16 bars.
