  • 3 cups flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. ground cloves
  • 3 medium apples, divided
  • 1 cup butter or margarine
  • 2 cups sugar
  • 2 eggs
  • 1 cup very strong cold coffee
  • 1/2 cup chopped pecans
  • 1/2 cup raisins

Step 1

Preheat over to 350

Grease 13x9" baking pan.

In small bowl, combine flour, cinnamon, baking soda and cloves. Pare, core and chop 2 apples.

In mixing bowl, with electric mixer at medium speed, cream butter and sugar until light and fluffy. Add eggs; beat until well-blended. Beat flour mixture alternately with coffee into creamed mixture. Stir chopped apple into batter with walnuts and raisins. Pour batter into pan. Bake 55-60 minutes or until toothpick inserted in center of cake comes out clean. Cook cake in pan on wire rack.

Just before serving, chop remaining apple. Cut cake into 12 pieces. Top with sour cream ahnd apple chunks.
