Ingredients

  • 9-inch baked pie shell

  • 3-ounce package cream cheese, softened

  • milk

  • 3

    pints strawberries

  • water

  • 1

    cup sugar

  • 3

    tablespoons cornstarch

  • Whipped cream

Directions

Mix enough milk with soft cream cheese to spread into bottom of pie shell. Set aside. Wash, stem and dry strawberries and arrange 2 pints of berries in pie shell. Mash remaining berries and add water to make 2 cups. I usually do this in the blender. In a small bowl, mix together sugar and cornstarch, set aside. Bring juice to boil and gradually stir in sugar/cornstarch mixture and bring back to a boil. Cook 1 minute more. Cool and pour over berries in pie shell. Serve cold with whipped cream.
