Shrimp-Stuffed Portobello Mushrooms

Ingredients

  • 1/4 cup EVOO
  • 1/2 cup chopped onion
  • 1/4 chopped fresh basil
  • 3 chopped garlic cloves
  • 1/2 tsp. chopped fresh rosemary
  • 8 oz. cooked shrimp
  • 2/3 cups fresh breadcrumbs made from crustless french bread
  • 1/2 cup grated parmesan cheese
  • 1/4 cup mayo
  • 8 2" mushrooms, cleaned and gills removed

Preparation

Step 1

Heat oil over med. high heat. Add onion, basil, garlic, rosemary. Saute till onion softens, 5 mins. Transfer to bowl; mix in shrimp, crumbs, cheese and mayo. Season with s&p. Arrange mushrooms on oiled baking sheet. Mound filling and pressing till compact slightly.
Bake 350 30 mins.
