Lemony Basil Mushroom Soup

Ingredients
- SAUTE:
- 1 1/4 cups chopped onions
- 1 lb sliced mushrooms
- 1 cup sliced celery
- 1 cup sliced carrots
- 4 cloves garlic, minced
- 1/4 cup margarine or butter ( or a small amount of olive oil)
- Add:
- 1 box/can 32 oz chicken broth
- 1 box/can 32 oz beef broth
- 1 can condensed cream of chicken soup
- or cream of mushroom or cream of mushroom w/roasted garlic
- 1/2 cup fresh basil leaves, chopped
- 1/2 tsp pepper
- 1 tsp lemon juice
- 1/2 cup uncooked wild rice
- 1/2 cup uncooked white rice
- low fat cream of mushroom soup works great

Preparation time 15mins
Cooking time 60mins
Preparation
Step 1
Bring to boil. Simmer all ingredients for 35 to 40 minutes.
** Dry basil can be used (1 tbsp) but fresh is much better.
Garnish with grated Parmesan is an option
