Lime Glazed Chicken

Ingredients
- 6 frozen boneless skinless chicken breasts
- salt and pepper
- cooking oil spray
- 1/3 C. chicken broth
- 1 lime, juiced
- 2 T. butter
- 1 T. capers
- 1/2 t. dill weed

Preparation
Step 1
Rinse chicken with cold water to remove ice glaze and pat dry with paper towels. Sprinkle chicken on both sides with salt and pepper to taste. Heat large frying pan. Spray with cooking oil spray. Add chicken and saute about 5 minutes on each side or until lightly browned. Turn chicken, cover and reduce heat to low. Cook 15 minutes or until internal juices run clear. Remove chicken to serving platter and keep warm. In same pan, add lime juice and cook over low heat until juice begins to bubble. Add butter, stirring until butter becomes opaque and slightly thickened. Add broth, capers and dill weed and heat until boiling. Spoon sauce over chicken.
