Key Lime Tart Squares
- 1 1/4 cups flour
- 1/3 cup sugar
- 1/2 cup butter
- 1 250g cream cheese, softened
- 2 egg yolks
- 1 can sweetened condensed milk
- 1/3 cup freshly squeezed lime juice
Mix flour, sugar and butter until crumbly. Press into 13 x 9 inch baking pan. Bake at 350F for 12 to 15 minutes until light brown.
Beat cream cheese until smooth; add egg yolks and condensed milk, beating well. In small bowl, combine cornstarch and lime juice. Stir into cream cheese mixture. Spoon into baked crust and bake a further 12 to 15 minutes or until center is set. Cool and chill thoroughly. Cut into squares and to with whopped cream if desired.
