Green Beans with Fig Sauce

This recipe is from the Parade Magazine in 2013. I served it for Thanksgiving and decided to drizzle the sauce over the green beans and made some slight modifications. Very good!This is keeper.

Ingredients
- Sauce:
- 1 lb. fresh green beans, trimmed and ends cut
- 1 tbs unsalted butter
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 c shelled pumpkin seeds (pepitas)
- 1 tbs evoo
- 1 tsp salt
- 1/2 tsp pepper
- 1 c fig preserves or apricot marmalade

Step 1
Preheat broiler.
Cook green beans in butter, salt and pepper in medium-sized pan over medium heat, about 5 mins.
Place seeds on lined baking sheet. Drizzle with evoo and sprinkle with salt and pepper. Toss to coat. Place in broiler for 2 mins, or until toasted. Combine seeds with preserves.
Serve green beans and drizzle with sauce. Keep sauce in small serving dish for more coating.
