Cheesy Swiss Chard Gratin

Ingredients

  • 1 potato (5 oz/150g), peeled and quartered
  • 2 tbsp butter
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1/4 cup all purpose flour
  • 1 3/4 cupa milk
  • 1/4 tsp cayenne pepper
  • Pinch of salt, pepper and ground nutmeg
  • 1/3 cup shredded Gruyere cheese
  • 3 tbsp grated Parmesan cheese
  • 2 1/2 cups shreded swiss chard

Step 1

1. In a small saucepan of boiling salted water, cook potato until tender, 10-12 minutes. Drain and let cool for 5 minutes. Thinly slice and overlap in greased 3 cup (750ml) shallow gratin dish.

2. Meanwhile, in small saucepan, heat butter on a med heat. Cook onion and garlic until softened, about 3 minutes. Stir in flour, cook for another minute. Constantly whisking, stir in 1/2 cup od milk at a time. Whiisk in cayenne pepper, salt, pepper and numeg. Reduce heat to low, simer, whisking occasionally, until thickened, 5-7 minutes. Stir in Gruyere and Parmesan cheeses.

3. Pour 1/2 cup of the saue over the potato. Top with swiss chard, pressing to compact. Pour remaining sauce over top. Bake in 400F for 20-25 minutes or until bubbly and browned.
