Chicken - Spinach and Feta Stuffed Chicken Breast

    chicken breasts

  • 1-2

    cloves of fresh garlic put through a garlic press or chopped very fine

    tablespoons olive oil

  • 1

    (16 ounce) bag fresh spinach boiled (or a frozen package works fine)

    cup feta cheese

  • ½

    cup butter ( melted) plus a bit of butter to rub on each breast

  • ¼

    cup very finely crushed bread crumbs

  • salt and pepper to season


1.Preheat oven to 350F (180C) 2.Prepare chicken for stuffing.(You can either, slice 2 thick chicken breasts in half and make 4, or beat 4 chicken breast until thin and wide.). 3.Using a skillet on the stovetop add your oil and garlic and cook for a few minutes until done, stir in the cooked spinach and cook a bit longer stirring well and being sure to stir the garlic onto all of the spinach. 4.Turn off the burner. 5.Stir in feta cheese and mix well. (You can add as much as you like. 6.Distribute spinach mixture onto each chicken breast. (You may have some leftover). 7.Wrap chicken around mixture (like wrapping a taco) and secure with toothpicks (be sure you count how many toothpicks you put into each and remove them all when done) 8.Rub some oil onto each breast, and just put a very light coating of the very finely crushed bread crumbs just to coat them lightly. You will barely see the bread coating. Season with salt and pepper. 9.Place in glass baking dish and pour butter over them. 10.Cook for 30 minutes, cover the glass dish with a lid or foil for the first 15 minutes. 11.Remove the lid or foil for the last 15 minutes (or until done) to brown up the chicken
