Sweet Potato Flan

Ingredients
- 4 cups yams, peeled and chopped into 1 inch pieces
- 3 cups half & half
- 4 whole eggs
- 1 egg yolk
- Salt and pepper to taste

Step 1
In a pot, combine half & half with yam pieces. Bring to a boil, then reduce to a simmer until yams are fully cooked (fork tender). Puree ingredients in a food processor, adding eggs. Season to taste, and pour into 5 ounce oiled ramekins. Place ramekins in a shallow pan with one inch of water. Bake at 325°F for approximately 40 minutes or until flan mixture is firm. Let rest for ten minutes.
With a sharp pairing knife loosen flan from the mold by cutting around the inner edge and unmold by turning it upside down on a plate and gently shaking it.
