Ground Beef Stew over Mashed Poltatoes

Ingredients

  • 1 lb ground beef
  • 1 med. onion chopped
  • 1 bag mixed vegetables
  • 1 14.5 oz. can diced tomatoes, undrained
  • 1 jar beef gravy
  • 1/2 t salt
  • 1/4 t pepper
  • 8 grand biscuits
  • 1 box mashed potatoes

Preparation

Step 1

Brown meat and onion, drain.
Add frozen vegetables, tomatoes, gravy, salt and pepper to beef mixture. Heat to boiling, reduce heat to medium low. Cover and cook 8-10 min.
Heat oven to 375 and bake biscuits, as directed.
Serve beef mixture over prepared potatoes with biscuits.
