  • 1 1/2 cups flour
  • 3/4 cup margarine
  • 3/4 cup powdered sugar
  • 3 eggs
  • 1 1/2 cups sugar
  • 3 Tbsp lemon juice
  • grated lemon rind
  • 3 Tbsp flour
  • 3/4 tsp baking powder
  • pinch salt

Step 1

Mix 1½ c. flour and powdered sugar together. Cut in margarine. Pat into 9x13 inch pan. Bake 15 minutes at 300°. While cooking, beat eggs well and add sugar. When mixed well, add lemon juice, rind, flour, baking powder and salt. Pour over baked crust and bake 25 minutes more. Sprinkle with powdered sugar and cool completely before serving.
