Ham and Potato Scramble

Ingredients

  • 8 eggs
  • 1/4 c. milk
  • 1/4 tsp. garlic salt
  • 1/4 tsp. black pepper
  • 1/4 thinly sliced green onion
  • 1 T butter
  • 1 c. shredded hash browns
  • 1/2 c. diced cook ham
  • 1/3 c. shredded Cheddar cheese

Step 1

In medium bowl, combine eggs, milk, garlic salt, and pepper. Beat with a mixer or whisk until well mixed. Stir in green onion. Set aside. In a large skillet, melt butter and add potatoes and ham. Cook for 6-8 minutes or until lightly brown. Add egg mixture. Cook over medium heat without stirring, until mixture begins to set on bottom and around edges. Using a large spatula, lift and fold the partially cooked egg mixture so uncooked portion flows beneath Continue cooking and folding 2-3 minutes more or until egg mixture is cooked through. Remove from heat and sprinkle with cheese. Serve warm.
