Blueberry Coffee Cake

Ingredients

• 1 c. margarine or butter
• 3 c. flour
• 1 1/2 tsp. baking powder
• 1 3/4 c. white sugar
• 4 eggs
• 1 tsp. vanilla

Preparation

Step 1

Cream shortening and sugar. Add eggs one at a time, beating after each addition. Add flour, baking powder, vanilla. Beat thoroughly. Put 3/4 of this batter (it will be stiff) in a well greased 11x15 jelly roll pan. Spread 1 can blueberry pie mix over batter, then add rest of batter a teaspoonful at a time. Spread out as best you can. Bake at 350 for 45 min. Top with powdered sugar glaze and serve warm.
