Ingredients

  • Glaze:
  • 3 cups all purpose flour ( half plain and white whole wheat if desired)
  • 1 t salt
  • 1 t baking soda
  • 1 t baking powder
  • 3 t cinnamon
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup apple sauce
  • 1 1/4 cups sugar
  • 1 cup brown sugar
  • 3 t vanilla
  • 1 cup orange (puréed)
  • 1 cup cranberries ( puréed)
  • (May substitute orange cranberry relish)
  • 1/2 cup sugar if using fresh cranberries
  • 1/2 cup powdered sugar
  • 1 t vanilla
  • 2 T orange juice
  • 1/4 t orange zest

Preparation

Step 1

Purée peeled oranges and cranberries. Add 1/2 cup sugar refrigerate overnight to allow flavors to mix. Greas and flour 2 bread pans. Preheat oven to 350 degrees. Sift flour, baking soda, baking powder, salt and cinnamon. Combine oil, eggs sugars and vanilla. Blend well , add cranberries, apple sauce and orange relish, Mix well. Bake at 350 for 45 min. Cool. Remove from pans.
Pour glaze over. I put pecans on bottom of pan before adding batter.
