Ingredients
- Glaze:
- 3 cups all purpose flour ( half plain and white whole wheat if desired)
- 1 t salt
- 1 t baking soda
- 1 t baking powder
- 3 t cinnamon
- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup apple sauce
- 1 1/4 cups sugar
- 1 cup brown sugar
- 3 t vanilla
- 1 cup orange (puréed)
- 1 cup cranberries ( puréed)
- (May substitute orange cranberry relish)
- 1/2 cup sugar if using fresh cranberries
- 1/2 cup powdered sugar
- 1 t vanilla
- 2 T orange juice
- 1/4 t orange zest

Preparation
Step 1
Purée peeled oranges and cranberries. Add 1/2 cup sugar refrigerate overnight to allow flavors to mix. Greas and flour 2 bread pans. Preheat oven to 350 degrees. Sift flour, baking soda, baking powder, salt and cinnamon. Combine oil, eggs sugars and vanilla. Blend well , add cranberries, apple sauce and orange relish, Mix well. Bake at 350 for 45 min. Cool. Remove from pans.
Pour glaze over. I put pecans on bottom of pan before adding batter.
