  • 2 cups flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 2 cups milk
  • 1/2 cup butter, melted, 1 stick
  • 1 cup blueberries
  • oil, for griddle
  • maple syrup

Directions:

1. Preheat the oven to 200*.

2. In a large mixing bowl, stir together the flour, sugar, baking powder, and salt. make a well in the dry ingredients and add the eggs, milk, and melted butter and mix together gently.

3. there will be lumps in batter. add half of the blueberries

4. Lightly oil the surface of a griddle or large skillet and heat over medium heat. Pour 1/4 cup of batter onto griddle.

5. Continue to pour out pancakes, spacing them well. Cook each pancake until bubbles form on the surface, then turn over and cook for an additional minute.

6. Keep the pancakes warm on a platter in the oven until you've made the whole batch.

7. Serve with maple syrup and top with remaining blueberries.
