Ingredients
- 1/4 c butter
- 2 Tbs olive oil
- 1 1/4 # red onion, dice fine
- 2 Tbs sugar
- 1/2 c white wine
- 2 Tbs cider vinegar
- 2/3 c fresh apricots, chopped
- 1/2 c dried apricots, chopped
- 1/3 c white raisins

Preparation
Step 1
Melt butter with oil add onions and sugar, sauté until tender and slightly caramelized
Deglaze with wine and vinegar, reduce by half
Add apricots and raisins, simmer 15 minutes
