  • 1 med eggplant
  • 6 tbs olive oil
  • 3 Marjoram springs
  • 1 tbs chopped parsley
  • 1 clove garlic
  • 1/2 jalapeño chopped
  • 1 pckg 4 cheese ravioli
  • 4 tbs parmesan cheese

Preparation

Step 1

1. Heat skillet over med heat. add eggplant cook for 6-8 min or until tender remove from skillet.
2. Chop eggplant coarsely, transfer back to pan and add oil. marjoram, parsley, garlic, and jalapeno season with salt and pepper.
3. cook pasta and toss with the ingredients in the skillet.
