I think of orange roughy as the fish for people who don't care for fish. Fast, easy, and delicious.
- 4 orange roughy fillets
- 1 egg
- 2 tablespoons honey mustard (or substitute equal parts spicy brown mustard and honey--also okay to leave out the honey)
- 3/4 cup seasoned bread crumbs
- 1/2 to 1 teaspoon cayenne pepper
- 3 teaspoons olive oil

Mix egg and honey mustard in medium bowl or pie plate
Mix bread crumbs and cayenne in large ziplock bag or pie plate.
Dip fillets in egg mixture then toss in bread crumb.
Place in refrigertor for half an hour so crumbs adhere.
Heat oil in large pan until it begins to shimmer; add fish and cook about 4-5 min per side (depending on how thick).
