Ingredients

  • Crust:
  • 3/4 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • Cake:
  • 32 ounces cream cheese
  • 6 eggs
  • 1 cup butter, melted
  • 2 cups sugar
  • 2 tablespoons vanilla
  • 1 ounce white creme de cacao
  • 1/4 cup key lime juice

Preparation

Step 1

Crust:
1. Preheat oven to 325 degrees F.
2. Blend all crust ingredients together in medium mixing bowl.
3. Press mixture into the bottom of a 10" springform pan.
4. Place the crust in the oven and bake until the edges are brown.
5. Remove from the oven and allow to cool.

Cake:
6. Soften the cream cheese.
7. Place all ingredients in a mixer with a wire whip attachment.
8. Whip on medium speed until the batter is smooth and there are no cream cheese lumps.
9. Pour this mixture into the springform pan.
10. Place the cake in the oven and cook for 20 minutes.
11. Reduce temperature to 250 degrees F and cook 30 more minutes or until center is firm to the touch.
12. Turn the oven of and allow the cake to cool in the oven with the door closed for 20 minutes.
