Ingredients

  • 1

    14 oz can black beans (organic are best), drained & rinsed

  • 2

    Small Tomatoes, seeded & chopped

  • 1

    Small Red Onion, diced

  • ½

    cup frozen corn, thawed OR can of Niblets, drained

  • 1

    Green Pepper, seeded & chopped

  • ¼

    cup fresh cilantro, chopped (more if you like cilantro)

  • 2

    cloves garlic, minced

  • 1

    tsp ground cumin

  • ½

    cup vegetable oil

  • 2

    Tbsp red wine vinegar

  • ½

    tsp salt

  • ½

    tsp fresh ground pepper

  • 1

    jalapeno pepper, seeded & chopped (optional)

Directions

Combine all ingredients. Cover and refrigerate for at least 2 hours.
