Ingredients
- 1 14 oz can black beans (organic are best), drained & rinsed
- 2 Small Tomatoes, seeded & chopped
- 1 Small Red Onion, diced
- 1/2 cup frozen corn, thawed OR can of Niblets, drained
- 1 Green Pepper, seeded & chopped
- 1/4 cup fresh cilantro, chopped (more if you like cilantro)
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 cup vegetable oil
- 2 Tbsp red wine vinegar
- 1/2 tsp salt
- 1/2 tsp fresh ground pepper
- 1 jalapeno pepper, seeded & chopped (optional)

Combine all ingredients. Cover and refrigerate for at least 2 hours.
