Grilled Red potato skewers

  • 2 lbs red potato quartered
  • 1/2 cup water
  • 1/2 cup mayonnaise or salad dressing
  • 1/4 cup chicken broth
  • 2 tsp dried oregano
  • 1/2 tsp garlic salt
  • 1/2 tsp onion powder



Step 1

Pre cook potatoes. Combine remaining ingredients in a bowl and add cooked potatoes. Cover and refrigerate for 1 hour. Drain, reserving mayonnaise mixture. Thread potatoes on to skewers. Grill uncovered over medium heat for 4 minutes. Turn and brush with reserved mixture. Grill 4 minutes longer or until golden brown.
Yield 6 servings
