PARMESAN ARTICHOKE NIBBLERS
- 4 large eggs
- 1 jar (6 oz.) marinated artichoke hearts
- 1 cup grated Parmesan cheese
- 1/4 cup fine dry bread crumbs
- 2 green onions
- 1/4 cup flat leaf parsley
- 1/4 cup dry white wine
- 1/4 t. oregano
- 1/8 t. black pepper
Preparation time 10mins
Cooking time 40mins
Preheat oven to 350. Spray 8.5 x 11 dish with Pam and set aside.
In large bowl, lightly beat eggs. Add cheese & crumbs.
Chop green onions and add to bowl.
Finely chop parsley and add to bowl. Add wine, oregano and pepper, stir to mix.
Bake uncovered, until set in center, ~ 20 min. Remove from oven and cool 10 min. before cutting into 20 pieces.
