Strawberry Muffins

Ingredients
- 1 cup strawberries slightly under ripe diced into quarter inch pieces
- 1 squeeze of lemon juice
- 1 cup of flower
- 1/2 cup of sugar
- 1 tsp. baking powder
- 1/4 cup vegetable oil
- 1/3 cup sour cream
- 1 tsp. vanilla extract
- 1 large egg

Preparation
Step 1
Preheat oven 400 - line muffin pan with liners
1. Put diced strawberries into a bowl spritz lemon juice and stir gently to combine (I also sprinkle a little bit of sugar on them too sometimes they aren't sweet enough)
2. In a medium bowl stir flour, sugar and baking powder together
3. In a small bowl beat together oil, sour cream, vanilla and egg. Pour mixture over dry ingredients, stirring to combine with a wooden spoon, fold in strawberries.
4. Fill cups cook for 12 - 14 minutes or until toothpick clear
