Veal saltimboca with lemon

Ingredients
- 4 veal chops
- 4 thin lemon slices
- 4 sage leaves, plus 1 tsp finely chopped
- 4 large slices of prosciutto
- 3 t olive oil
- 1/2 c white wine
- 1/2 c chicken broth
- 14.5 oz can tomatoes, drained and chopped
- 1/2 c cream
- 1/2 tsp salt
- 1/4 tsp pepper

Step 1
1) season chops with salt and pepper. place slice of lemon on each chop. top with sage leaf and prosciutto. press to seal.
2) warm oil in skillet over md heat, place chops in hot oil lemon side down. saute til prosciutto starts to caramelize, about 2 minutes. turn chops over and saute another 2 minutes. remove to platter and set aside
3) deglaze pan with wine (scrape bits from pan with wooden spoon) add broth and reduce by half. add tomatoes, cream, salt and pepper. stir til combined and hot. pour over veal, top with remaining sage.
