Ingredients

  • 24 small red potatoes (~2.5 lb.)
  • 1/4 cup butter cubed
  • 1/2 cup shredded Parmesan cheese, divided
  • 1/2 cup crumbled cooked bacon, divided
  • 2/3 cup sour cream
  • 1 egg, beaten
  • 1/2 t. salt
  • 1/8 t. pepper
  • 1/8 t. paprika

Step 1

Cook potatoes in water until tender. Drain.
When cool cut thin slice off top and scoop out pulp.
In large bowl. mash tops and pulp with butter. Set aside 2 t. each of bacon and cheese for garnish and add remainder to potatoes. Stir in sour cream, egg, salt & pepper.
Spoon mixture into potatoes. Top with remaining bacon & cheese, sprinkle with paprika.
Place on ungreased sheet and bake at 375 12-18 min.
