Stringbeans with Almonds and Lemon

  • 2 lbs of green beans, trimmed
  • 2 tbls salt
  • 2 tbls sweet butter (this is approximate use more or less depending on how buttery you want the beans)
  • 3/4 c. slivered almonds
  • 4 tsp grated lemon zest
  • 1/3 c. finely chopped italian (flat leaf) parsley
  • Salt and Pepper to taste

Step 1

!) Bring 3 qts of water to a boil, add the salt, and when the water returns to a boil, add the beans. Boil for 6 - 10 minutes (until crisp/tender) then drain and shock the beans in ice water to set the color and stop the cooking
2) Melt the butter, add the nuts and saute until browned, about 3 minutes. Add beans, toss to coat with the butter and reheat, about 5 minutes. Mix in lemon zest, cook one minute. Mix in parsley, season with salt & pepper and serve
