Ingredients

  • 2 Pieces Halibut or 1 large
  • 1/2 Red onion minced
  • 2 Cloves garlic minced
  • 1 Tablespoon dijon mustard
  • Splash White wine
  • 2 Tablespoons olive oil
  • 1/2 orange juice & zest
  • 1/2 lemon juice & zest
  • 1/2 lime juice & zest
  • Sea salt
  • Fresh pepper
  • Grill seasoning
  • Whole wheat pitas
  • Salsa for fish in pita
  • 1 Cup cucumber diced
  • 1 cup pineapple diced
  • small amount chopped scallion green only
  • Little olive oil
  • Little lime juice
  • Mint & Cilantro chopped
  • Salt & pepper

Preparation

Step 1

Mix all ingredients, except salt, pepper, & grill seasoning.
Put salt, pepper, & grill seasoning directly on both sides of fish. Rub on good.
Then place fish in dish and turn in marinade.
Cover and place in refrigerator for no more thn 40 minutes.
Brush olive oil on grill.
Place fish on grill cook on each side until you can remove fish easily without pulling it off grill.
Brown each side of pita pocket.
Remove fish cut up put into pita, and top with cucumber, pineapple salsa.
