POTATOES AND MUSHROOM IN RED WINE

Ingredients
- 1/2 cup butter
- 1 lb. potatoes, halved (new potato)
- 3/4 cup red wine
- 1/3 cup beef stock
- 8 shallots, halved
- 2 cups oyster mushrooms (open-up mushroom)
- 1 tbsp chopped fresh sage or cilantro
- Salt and pepper
- Sage or Cilantro springs to garnish

Preparation
Step 1
1. Melt the butter in a heavy based skillet and add the halved potatoes. Cook gently for 5 mins. Stirring constantly.
2. Add the red wine, beef stock and halved shallots. Season to taste with salt and pepper and then simmer for 30 minutes.
3. Stir in the mushrooms and chopped sage or cilantro and cook for 5 minutes.
4. Turn the potatoes and mushrooms into a warm serving dish. Garnish with Sage or Cilantro leaves at once.
