Ingredients

  • Cake: 1 C. oil

  • 1 1/2

    C. sugar

  • 4

    eggs at room temperature

  • 15

    oz. pumpkin

  • 1

    t. soda

  • 2

    t. baking powder

  • 2

    t. cinnamon

  • 1

    t. salt

  • 2

    C. flour

  • Frosting: 1 cube butter at room temperature

  • 18

    oz. cream cheese at room temperature

  • 2 1/2 to 3

    C. powdered sugar

Directions

Cake: Mix oil and sugar. Add eggs, but beat mixture after each one. Mix in pumpkin. In a seperate bowl mix all remaining dry ingredients. Add dry ingredient mixture to pumpkin mixture. Mix until just combined. Bake cake in 350 degree oven for 23 minutes. Frosting: Microwave cream cheese for 20 seconds. Mix together butter, cream cheese and powdered sugar.
