Orange Coconut Creram Pie

Ingredients

  • 3/4 cup shredded sweetened coconut
  • 2 cups whole milk
  • 3/4 teaspoon orange extract (if you use store brand double)
  • 3/4 cup coconut milk (canned)
  • 3/4 tablespoon butter
  • 5 egg yolks
  • 3/4 cup sugar
  • 3 3/4 tablespoons corn starch

Preparation

Step 1

1, Heat coconut milk, coconut, whole milk, and butter until almost boiling.

2. Combine sugar, cornstarch, and egg yolks. Temper one cup of the above hot milk gradually into dry mixture. Combine rest of hot milk.
Cook stirring constantly over med heat until bubbling and thick.

3. Pour into a baked pie shell. Let cool.Place plastic wrap on top of custard while chilling. When cold garnish with whipped cream and plain or toasted coconut. When whipping cream add another 1/2 teaspoon of extract.
If you do not want to bake pie shell, buy Wick's brand in freezer section. They come two in a pkg. Very good. Keep frozen until ready to use.
