Capellini with Spicy Zucchini Tomato Sauce

Ingredients
- 3 tbsps of olive oil
- 1 clove of garlic minced
- 1/4 tsp of red pepper flakes
- 1 28oz can of diced tomatoes
- 1 zucchini cut up into chunks
- 1/2 pound of capellini
- 1/4 cup of fresh basil
- parmesan cheese for topping
- Kosher salt for seasoning

Step 1
Heat the olive oil in a large skillet on medium heat, add the garlic and red pepper flakes, cook until the garlic is golden brown (1min.) Add the can of tomatoes to the skillet, crushing them with a spoon or masher. Add ½ tsp of salt and simmer, stirring occasionally until the sauce begins to thicken (15min) Add the zucchini and cook until crisp and tender (5min), Season with salt.
Meanwhile, bring a large pot of salted water to boil, cook the capellini per cooking directions on the box. Drain, add to the sauce, toss with basil. Top with parmesan cheese .
