Grilled Plum & Prosciutto Stuffed Pork Chops

Ingredients

  • 4 pitted dried plums, halved
  • 2 slices prosciutto, halved
  • 1/2 t crushed fennel seeds
  • 1/2 t paprika
  • 1/2 t chopped sage
  • 1/2 t chopped rosemary
  • 1/4 kosher salt
  • 1/4 t crushed red pepper
  • 1/4 t pepper
  • 4 4oz. boneless center-cut loin pork chops
  • Cooking spray
  • 2 t balsamic vinegar
  • 2 t molasses

Preparation

Step 1

Prepare grill
Soak pitted dried plum halves in boiling water 5 min. Drain
Wrap 2 plum halves in each prosciutto piece
Combine fennel seeds & next 6 ingredients in small bowl.
Cut horizontal slit thru thickest portion of each pork chop to form a pocket.
Stuff 1 prosciutto wrap in each pocket. Sprinkle chops with fennel mixture. Place chops on grill rack; grill 5 min each side. Combine vinegar & molasses, brush over chops.
